The test currently identifies devices by instance number, which is not
guaranteed to be constant across builds. Add node labels so the test
can be updated to use a more permanent node identifier.
Also remove insensitive (and misleading) terminology in the node
labels.

The STM32 I2C drivers don't utilize the Kconfig symbols for per
instance I2C anymore so we don't need to set them in the
conf files for this test.

Update the board overlays used in the i2c_slave_api tests to match the
new device tree bindings for atmel,at24 I2C EEPROMs.

Application board.overlay files tend to be paired with
boards/board.conf files that extend the functionality of a board.
Move the overlay files to the same location as the config files that
they work with.
A few overlay files that are paired with a prj_board.conf file in the
application root directory are left in place.

I2C_STM32_V1 and I2C_STM32_V2 are Kconfig symbols used to
select STM32 I2C driver variant based on I2C IP available on a
given STM32 SoC.
Being SoC dependent, they are automatically selected in soc/
if CONFIG_I2C is set. Then there is no need to define them at board
level, nor for a specific application like this is done in
some sample or test applications. Remove these definitions when
this is the case.

Port all users of 'set_conf_file' to use the built-in rules
instead. This follows the convention-over-configuration principle to
make the system as a whole simpler and more consistent.

Adding i2c slave requires overlay with node definitions and
proper aliases depending on driver implementation.
Modified i2c_slave_api test to use information from dts.

Add a new test to make I2C transfers between an I2C controller and
an I2C slave driver, either by:
- Using a virtual I2C driver
- Using a physical link and 2 physical controllers
The Physical test uses :
- Two EEPROM Slave drivers each connected to one I2C controller
- Both I2C controllers also act as master and take turns writing
to the opposite EEPROM Slave.
All of this connected physically on the board.
