Sensor Kconfig sybmols should be enabled if CONFIG_SENSOR=y
and the devicetree node for the sensor is enabled. We can
remove explicitly enabling specific sensor drivers in .conf
files.

The NRF driver doesn't utilize the Kconfig symbol for per instance I2C
so we can remove setting that in the conf file.

The options selecting nRF drivers are now enabled by default when
an nRF SoC is selected as the build target.
The options selecting given hardware instances are now enabled at
the board level.
