Enable `NET_ZPERF_SERVER` for samples that currently enable `NET_ZPERF`
to prevent feature regressions.

Convert them to native YAML lists. Support for space-separated
lists was deprecated in Twister a long time ago.

This commit uses the new .. zephyr:code-sample-category directive to
categorize code samples across the tree.
Updates existing legacy references to manually defined targets to now
use :zephyr:code-sample-category: role instead.

Add an IVSHMEM Ethernet sample to communicate between Zephyr
and Linux root cell within the Jailhouse hypervisor.
The supported configuration runs the Jailhouse hypervisor
within QEMU Cortex-A53.
