native_posix is being deprecated, let's switch this test to native_sim
instead.

The commit adds overlay for native_posix and modifies testcase.yaml
to allow testing CONFIG_DISK_DRIVER_FLASH with device that
do not have erase requirement.

STM32 devices with an SDMMC driver will still need to be tested, but
they do not use the SDHC framework for their disk driver. Therefore, add
a special testcase to validate disk access support for devices with the
STM32 specific SDMMC DT compatible enabled.

This sets up a backing device, creates a FAT file system, then opens a file
as a loopback device and runs the disk_access tests on that.

Rework RAM disk driver to be configured using devicetree and
support multiple instances.
This patch also removes a copy of the RAM disk driver,
tests/subsys/fs/fat_fs_dual_drive/src/disk_access_test_drv.c,
that was there for testing multiple disk drivers support.
Bonus: one SYS_INIT() less and a memory region can be exported to the
host.

On Qemu x86_64 it is possible to emulate an NVMe controller and disk on
the PCIe bus, so let's add this case here to verify that the newly added
NVMe controller and disk driver works fine.

Rename disk driver test to disk_access, as multiple disk tests exist.
Disk access test is intended to verify disk functionality.
