strnlen is not a C standard API, but an extension.
Instead of relaying that the SOURCE macro was set somewhere else
of that the C library provides a prototype anyhow
let's explicitly define it for this library.

In order to bring consistency in-tree, migrate all tests to the new
prefix <zephyr/...>. Note that the conversion has been scripted, refer
to #45388 for more details.

This adds test for bt_uuid_create APIs using a byte array in LE/BE
format as it is expected and then proceed to compare with matching and
unmatching UUID declared in host byte order.
